10 - 8 small flour or corn tortillas
11 - 2 cups shredded cheddar cheese or Mexican blend, divided
12 - 2 cups enchilada sauce (store-bought or homemade)
13 - ¼ cup fresh cilantro, chopped (optional)
14 - ¼ cup sliced green onions (optional)

# Directions:

01 - Set the oven temperature to 375°F.
02 - Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 3 minutes. Add garlic and cook for another minute.

06 - Pour remaining enchilada sauce over the rolled tortillas. Sprinkle the remaining cheese evenly on top.
07 - Cover the dish with aluminum foil and bake for 20 minutes.
08 - Remove the foil and bake for an additional 8 to 10 minutes until cheese is melted and bubbly.
