# Directions:

01 - Combine water, granulated sugar, salt, and unsalted butter in a medium saucepan. Bring mixture to a boil over medium heat.
02 - Reduce heat to low and add all-purpose flour at once, stirring vigorously. Continue mixing until a smooth ball forms and dough pulls away from the pan, about 1 to 2 minutes. Remove saucepan from heat and let dough cool for 5 minutes.
03 - Transfer the cooled dough to a piping bag fitted with a large open star tip.
04 - Pour vegetable oil into a deep saucepan or fryer. Heat oil to 350°F.
05 - Pipe 1-inch segments of dough directly into the hot oil, using kitchen scissors to cut each segment. Fry in batches for 2 to 3 minutes, turning occasionally, until golden brown.
06 - Remove fried churro bites with a slotted spoon and allow to drain on paper towels.
07 - Prepare cinnamon sugar mixture in a bowl. While churro bites are still warm, toss them in the mixture until evenly coated.
