# Expert Advice:

01 -
  • Every bite gives you something different, crunchy then creamy then smoky, so your fork never gets bored.
  • It comes together faster than delivery and tastes like you ordered from somewhere expensive.
  • Leftovers actually improve overnight as the noodles soak up all that sesame and lime.
02 -
  • Do not skip rinsing the noodles under cold water, or they will keep cooking and turn mushy in the bowl.
  • Pat the shrimp completely dry before marinating, or the marinade will pool instead of cling and your shrimp will steam instead of char.
  • Dress the noodles while they are still warm so they absorb the sesame oil and soy sauce properly.
03 -
  • Thread shrimp onto two parallel skewers instead of one so they don't spin when you flip them on the grill.
  • Toss the noodles with a tiny bit of the shrimp marinade before adding the sesame dressing for an extra layer of flavor.
  • If your avocado is not quite ripe, leave it out and add extra cucumber or a handful of edamame instead.
