# What You'll Need:
→ Olives & Cheese
01 - 1½ cups mixed green and black pitted olives
02 - 7 oz feta cheese, cut into 1 cm cubes
→ Marinade
03 - 3 tbsp extra virgin olive oil
04 - 1 tbsp freshly squeezed lemon juice
05 - 1 tsp dried oregano
06 - 1 tsp fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - ½ tsp red pepper flakes (optional)
09 - Freshly ground black pepper, to taste
→ Garnish
10 - 2 tbsp fresh parsley, chopped
11 - Zest of half a lemon
# Directions:
01 - Place mixed olives and feta cubes in a medium mixing bowl and gently mix.
02 - Whisk together olive oil, lemon juice, dried oregano, thyme leaves (if using), sliced garlic, red pepper flakes, and black pepper in a small bowl.
03 - Pour the marinade over the olives and feta, tossing gently to coat without breaking the cheese.
04 - Cover and refrigerate for a minimum of 30 minutes up to 4 hours to develop flavor.
05 - Bring to room temperature, then sprinkle with chopped parsley and lemon zest. Toss lightly before serving.
