# Directions:
01 - Whisk the all-purpose flour, baking powder, and salt in a medium bowl and set aside.
02 - Beat unsalted butter and granulated sugar in a large bowl until the mixture is light and fluffy, approximately 2 to 3 minutes.
03 - Add the large egg and pure vanilla extract to the creamed mixture, beating until fully combined.
04 - Gradually add the flour mixture to the wet ingredients, mixing just until incorporated to form the dough.
05 - Separate the dough into three equal portions. Leave one plain, tint one with red gel food coloring, and the other with green gel food coloring, ensuring each is evenly colored.
06 - Roll each dough portion between two sheets of parchment paper into rectangles approximately 9 by 6 inches, matching thickness and size. Chill for 20 minutes.
07 - Stack rectangles with the plain layer on the bottom, followed by red, then green. Trim edges to align precisely.
08 - Roll the stacked dough tightly from the long side into a log, removing parchment as you proceed. Optionally, roll the log in colored sanding sugar for decoration.
09 - Wrap the log in plastic wrap and refrigerate for a minimum of two hours until firm.
10 - Preheat oven to 350°F and line baking sheets with parchment paper.
11 - Cut the chilled log into 1/4-inch thick rounds and place on baking sheets, spacing them 2 inches apart.
12 - Bake for 9 to 11 minutes until set but not browned. Cool on the baking sheet for 3 minutes before transferring to a wire rack to cool completely.
