01 - 1/2 cup popcorn kernels
02 - 2 tablespoons vegetable oil (canola or sunflower)

03 - 4 tablespoons unsalted butter
04 - 3 tablespoons honey
05 - 1 to 1.5 teaspoons hot sauce (e.g., Sriracha, Franks RedHot), to taste
06 - 1/2 teaspoon chili flakes (optional)
07 - 1/2 teaspoon fine sea salt
# Directions:
01 - Warm vegetable oil in a large heavy-bottomed pot over medium-high heat. Add two popcorn kernels and cover with a lid.
02 - Once the test kernels pop, add the remaining popcorn kernels evenly. Cover the pot, leaving the lid slightly ajar to allow steam to escape. Shake occasionally while popping.
03 - When popping slows to intervals of 2 to 3 seconds, remove the pot from heat and transfer the popped kernels to a large mixing bowl.
