# Directions:
01 - Melt unsalted butter in a small skillet over medium-low heat. Add sliced yellow onion, granulated sugar, and a pinch of salt. Cook gently, stirring intermittently, until the onions reach a deep golden hue and are fully caramelized, approximately 12 to 15 minutes.
02 - Transfer caramelized onions with pan juices into a blender. Add 2 tablespoons of milk and blend until silky smooth. Pass the mixture through a fine-mesh sieve for a refined texture.
03 - Brew 2 shots of espresso and divide evenly into two cups. Stir 1 tablespoon of strained onion purée into each cup until thoroughly combined.
04 - Heat the remaining milk until steaming. Froth using a milk frother or whisk until creamy and foamy.
05 - Pour frothed milk over the espresso-onion mixture in each cup. Sweeten with honey or maple syrup if desired, then gently stir before serving.
