10 - 2 tbsp fresh parsley, chopped

# Directions:

01 - Set the oven to 400°F and line a baking sheet with parchment paper.
02 - Place pumpkin slices in a large circle on the baking sheet to shape a pumpkin face.
03 - Outline eyes, nose, and mouth with bell pepper strips, then fill in with zucchini and red onion for color.
04 - Drizzle olive oil over vegetables, then sprinkle smoked paprika, cumin, salt, and pepper evenly.
05 - Bake for 25 to 30 minutes until vegetables are tender and lightly caramelized.
