# Expert Advice:

01 -
  • One pan means you're basically done before anyone's even awake enough to ask what's for breakfast.
  • The cheese gets impossibly melted and the egg stays fluffy, which shouldn't work together but somehow does.
  • You can pile on whatever toppings you have hiding in your fridge without a single thing falling off.
02 -
  • The eggs will look slightly underdone when you remove them from the oven, and that's exactly when you should remove them, because they keep cooking on the hot pan and get to perfect fluffy in about two minutes.
  • Using a rimmed sheet pan specifically prevents any egg mixture from running off the sides, which I learned after trying a flat baking sheet and creating an oven mess I'm still thinking about.
03 -
  • If you're cooking for people with different spice tolerances, keep the salsa and hot sauce on the side so everyone controls their own heat level.
  • The smoked paprika is subtle enough that most people won't identify it, but they'll notice something warm and appealing in the background that makes them take another bite.
