06 - 2 tablespoons rice vinegar
07 - 1 tablespoon sesame oil
08 - 1 tablespoon fish sauce
09 - 1 teaspoon soy sauce (or gluten-free soy sauce as needed)
10 - 1 teaspoon honey or sugar
11 - 1 garlic clove, finely minced
12 - 1 teaspoon grated fresh ginger
13 - 1 small red chili, thinly sliced (optional)

# Directions:

01 - Combine cucumber slices, red onion, julienned carrot, scallions, and chopped cilantro in a large bowl.
