01 - 1 cup fresh spinach, chopped
02 - ½ cup canned or jarred artichoke hearts, drained and chopped
03 - ½ cup cream cheese, softened
04 - ¼ cup sour cream
05 - ½ cup shredded mozzarella cheese
06 - ¼ cup grated Parmesan cheese
07 - 1 garlic clove, minced
08 - ¼ teaspoon salt
09 - ¼ teaspoon freshly ground black pepper
10 - Pinch of red pepper flakes (optional)
→ Sandwiches
11 - 8 slices sourdough bread
12 - 2 tablespoons unsalted butter, softened
13 - 1 cup shredded mozzarella cheese
14 - ½ cup shredded cheddar cheese
# Directions:
01 - In a medium bowl, combine cream cheese, sour cream, mozzarella, Parmesan, garlic, salt, pepper, and red pepper flakes; mix until smooth.
02 - Fold in chopped spinach and artichoke hearts until evenly incorporated.
03 - Spread a generous layer of the spinach artichoke dip on four sourdough slices, then top each with extra mozzarella and cheddar cheese.
04 - Place the remaining four slices of sourdough bread on top to form sandwiches.
05 - Spread softened butter evenly on the outside of each sandwich slice.
06 - Heat a large skillet or griddle over medium heat; cook sandwiches 3 to 4 minutes per side, pressing gently, until golden brown and cheese is melted.
07 - Remove from heat, let cool 1 to 2 minutes, then slice and serve warm.
